IT STARTED WITH ONE SIMPLE INGREDIENT: COCONUT
This dish first came to life at a community event hosted by the Filipino American Chamber of Commerce of Greater Nevada. A celebration of Filipino food, culture, and connection.
Chef Rang was invited to create something where coconut would be the star.
The result: a delicate Chilean sea bass, pan seared to crisp-edged tenderness. A lemon-coconut sauce, bright and comforting all at once. Grilled asparagus for balance, and steamed jasmine rice to bring it home.
Since then, it’s never left the menu.
A QUIET KIND OF FUSION
Chef Rang doens’t approach cooking with a checklist of cuisines. She cooks from memory, and that memory is layered — Filipino, Chinese, Spanish, Italian — all rooted in family and the flavors she grew up with.
When she creates a dish like this one, you won’t find sharp edges or shocking contrasts. Instead, you’ll find harmony.
The sea bass is a nod to coastal Mediterranean cooking. The lemon-coconut sauce pulls from Filipino and Southeast Asian flavors, where coconut milk is comfort and citrus is brightness. The jasmine rice and vegetables hold everything in balance.
Each part is familiar on its own. But together, it becomes something new, something unmistakably Rang’s.

Las Vegas has no shortage of “fusion” restaurants, but Rang’s Cocina Moderne doesn’t aim to be trendy.
