Chef Rang Tan’s menu is shaped by the cultures that shaped her: Chinese, Filipino, and Spanish, with Italian influences woven naturally through technique, comfort, and shared culinary language. Her cooking does not force these traditions into conversation. They have been speaking to each other for centuries.

As Rang’s Cocina Moderne approaches its third year in business, the family-owned Las Vegas restaurant will mark the milestone by participating in Las Vegas Restaurant Week, joining local restaurants throughout Southern Nevada in supporting Three Square Food Bank.

At Rang's Cocina Moderne this May 10, it comes with two dishes that weren't on the menu before — one that is staying, and one that is coming back for a single day.

Pesto is one of those things most kitchens don’t question. It’s built on repetition — basil, olive oil, garlic, pine nuts — and it works because it’s been done that way for so long. Chef Rang didn’t set out to change it. She just didn’t follow it exactly.
